Yummy! My Favorite muffins! I adapted the recipe from the Paleo Holiday bundt cake (Paleo Parents) I tried and I am in love! I make a new batch every week or two (whenever I run out). So far, everyone who has tasted them has loved them, unless of course they are lying to me which is quite possible ;-) LOL
I call them protein muffins because they use almond flour, and that's a source of protein, and fruit, well they are packed full of yummy fruity stuff. Its hard to find dried fruit that is not full of sugar and chemicals, but there is some out there if you look!
Ingredients:
- 4 C blanched almond flour (you can find this at Save-On in the bulk baking stuff)
- 1 Tbsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cardamom
- 1/2 tsp ground cloves
- 1/2 tsp ground ginger
- 1/4 C maple syrup
- 1/4 C honey (since it will be cooked it doesn’t need to be raw)
- 4 eggs
- 1 Tbsp vanilla
- 1/2 C butter - melted works best
- 2 medium apples, (not peeled) grated and strained
- the zest from 1 orange (i use the grater not the zester)
- 1 cup of raisins **
- 1/2 cup of organic dried apricots chopped (I use Prana Apricots - I get them at Save-on) **
- 1/2 cup of chopped dates **
- 1/2 cup of blanched slivered almonds (or any other nut of your choice)
- 1 cup of dark chocolate chips (optional)
Instructions
- pre-heat your oven to 325
- Sift together dry ingredients
- In a separate bowl, beat your wet ingredients until well combined - add the eggs one at a time and allow them to mix in well
- Mix dry ingredients
- Add fruit into wet until fully incorporated
- Fill muffin liners to the top (they don't raise)
- Bake for 30-40 minutes depending on your oven!
** be sure to check the ingredients to make sure that sugar and any yucky chemical stuff is not listed on the ingredients!

Wow! It has been a long time since I have written a post!
As always I do have really good excuses...
1. We moved
2. I work full time and have a toddler
3. I started a running group which seems to take a lot of my time

I'm pretty sure I have said this before, but working full time SUCKS! I spend all day "fixing" other people's children, and I get home and have not time and patience for my own. (Don't get me wrong, I love my job, I just miss my baby girl). All my baby girl wants is mommy, and all I want is to be left alone. How horrible am I? Well that's only the first tier of the cake. I'm short tempered and I shout a lot. She gets up in the night, and I just want to sleep. My impatience gets the better of me so often.
I always have good intentions of doing great fun things with Avery, but I never do. I say I am going to start making more of her treats and meals because I want her eating healthy and I never do. I say I am going to be more patient with her, and I never am. We will go for walks, we never do. We will bake together, and we never do. Let's go tobogganing, we never go. We will read together everyday, and we never do. WOW! What do I do with Avery? Seems like a whole lot of nothing.
I feel really bad about not doing more with Avery. She loves to be outside, she loves to craft, she loves to just play and have my attention. I have no excuses for not giving her more of me. I should give her more of me. She is my number 1 and the rest of life seems to get more attention than she does. She really is a sweet kid, and I love her to bits. Kinda sucks to know, and admit that you are a terrible parent! Yikes!
Today Avery and I will bake together, and we will go for a walk together.
It's amazing how this post has changed from me turning on the computer to finishing. My intention was to write about the 30 day Paleo challenge I am setting up and work, and I ended up writing about what a terrible mother I am!
