The numbers are shrinking!!

Woo Hoo!!  The scales are moving in the right direction!! I am struggling soooo much with the last 8lbs of baby weight, oh, and some days the last 15lbs of baby weight!!  The scales are finally moving in the right direction again, and this time I am determined to keep the numbers getting smaller!!  

I see woman with babies much younger than mine, and they look fantastic.  Its so heartbreaking to know how hard I have worked, and how I am still not there!!  I found the following quote, and its true.  Those girls who are back to pre-baby weight in a few weeks are so lucky, but my fight with my weight loss is making very strong. 


I have a constant battle with eating whatever I want, and eating responsibly.  I want to be in my skinny jeans so badly, but I want that piece of cake, I want to go to Red Robin for a sandwich and fries, or KFC for some hot wings once in a while, I want that glass of wine!!

The reality of it all is I can have all those things/treats that I want so badly!  I just have to earn it.  I have to go for a run, or work out, or do enough exercise to incorporate those extra calories in my diet. That is why fighting to be skinny is making me stronger. It is forcing me to do that exercise on the days I am not wanting to get out there.  I will keep fighting!  I will comfortably wear my skinny jeans!!

Taking a Step Forward

I was browsing my Pinterst boards to post my thought of the day on my Facebook page, and I came across this photo/ quote... 

This is such a powerful quote, regardless of what you are trying to accomplish in your life.  If you want to move ahead in life you need to take the necessary steps to so.

Today I took a huge step forward.  I went for my first PAIN FREE run today!!  Yippee!!  My goal for today was to run 15 minutes.  Once I got out there I was in it.  I ran 4.15km in 21:03.  I actually surprised myself.  My first km felt a little slow, but I got into the groove (actually my quickest km at 4:53).  My 2nd km felt comfortable (5:02).  My 3rd km was another story.  I could feel my pace fall off drastically, and I really was not feeling well.  I wont get into how my stomach felt. lol.  When I got home and checked my splits out I was pleasantly surprised that my pace wasnt as slow as it felt.  I was convinced I have run 5:30+, but I clocked a 5:14.  Not horrible!  My final km I was able to bring the pace home a little and wrapped up a 5:01.

Although this was a short run, and was slower than my sub 50min 10km goal pace,  I have to say I was not totally disappointed.  I realize I have lost a lot of fitness sitting on my butt recovering, but I am confident that with hard work it will come back to me easier that it was to get there in the first place.

If I am planning on training to run the Goodlife Fitness 1/2 Marathon in October, I need to be able to start my training regiment out with a 10km run on Sunday.  Lets hope this week I can build up to that!!

Zuchinni Bites/Tots

My daughter is usually a pretty good eater. We have often referred to her as the baby garbage disposal, she will eat anything. HOWEVER, it seems as though she is now developing her taste buds.  I have been finding it increasingly more difficult to get her to eat her vegetables.  She used to love broccoli and cauliflower, now she wont touch the stuff.  I decided it was time to get creative, and of course I resorted to pinterest to help me out!  I have been feeding Avery lots of 'tater tots' because she will eat them, and they are super convenient, so when I came across the zucchini version I was pretty excited, and hoped she would fall for it!!

When I went to the store to but the zucchini I thought I would need tons of the stuff to make a 1 cup of it grated. Surprisingly 1 cup was one zucchini!!!  Since I was making it for the baby I skipped the onion and added extra zucchini.  I tasted one and thought they were pretty good, the baby also ate all of hers, so I think it is a winner!! (we will see if she eats it tomorrow!)


Ingredients:
1 cups zucchini, grated
1 egg
1/4 yellow onion, diced  - i used 1/4 cup extra of zucchini
1/4 cup cheese (cheddar or Parmesan work the best)
1/4 cup bread crumbs - I used Italian style - i used panko bread crumbs
Salt and Pepper i did not salt and pepper since i was making it for the baby

Directions:
1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.
